This strictly high grown organic coffee is European Prepped, which indicates the coffee has undergone rigorous sorting - usually by hand, though increasingly via optical sorters. The flavors in the hot cup are well balanced and sweet, with notes of chamomile, lemon, and pear. The cup boasts and floral aftertaste. The cup has a red berry accent, sweet and tart, the latter aspect casting a soft but refreshing acidic impression on the cup profile. Medium-bodied and smooth, when roasted to a medium roast this coffee offers a very sweet acidity.
